A.O.C. of Our Winery

Our winery proudly produces wines from the prestigious Appellations d’Origine Contrôlée (A.O.C.) of Bordeaux and Cadillac Côtes de Bordeaux. These regions are famous for their exceptional terroir and rich winemaking history, allowing us to create wines of outstanding quality and distinction.

Our Winemaking Process

Harvest Arrival and Sorting

We begin by placing the newly harvested grapes on a vibrating sorting table. Here, we meticulously remove leaves, stems, and any damaged fruit, ensuring only the finest grapes proceed to the next stage.

Sulphiting

To safeguard the grapes's freshness and prevent oxidation. We add sulphur dioxide before transferring it to vats. This critical step preserves the grapes' integrity and protects them from spoilage.

Yeasting

We introduce selected yeast strains to the grape must (crushed grapes and juice). This controlled process initiates alcoholic fermentation, transforming the sugars into alcohol. The chosen yeast strain significantly influences the wine's flavour profile and quality.

Pumping Over

We conduct two daily pumping cycles during fermentation, employing a peristaltic pump. This delicate process involves circulating the fermenting liquid over the grape skins, gently extracting colour, flavour, and tannins. We maintain a slow, controlled pace to ensure optimal extraction without harshness.

Maceration

Following fermentation, the wine undergoes a maceration period of approximately one month. This process involves keeping the wine in contact with the grape skins to enhance its complexity and character. Subsequently, we drain the liquid wine and press the remaining solid grape matter (marc) using a small vertical press equipped with 5hl wooden cages. This method yields high-quality press wine.

Separation

We then separate the liquid wine from the solid grape matter. The extracted wine undergoes malolactic fermentation in tanks, a process that softens its acidity while increasing complexity.
